BUNDT DE GRAND MARNIER Y CHIPAS DE CHOCOLATE CON SALSA DE NARANJA AMARGA #BUNDTBAKERS

Hola otra vez. 

Como seguramente ya sabéis, el 15 de Noviembre es el National Bundt Cake Day. Ya el año pasado publiqué una receta estupenda;Bundt de Limón, Jengibre y Pimienta. Entonces no sabía que hay por ahí grupos de aficionados a la pastelería que se dedican a publicar recetas de Bundt de forma periódica. 
Tal es el caso de #BundtBakers, grupo al que me he apuntado. Este grupo se encuentra una vez al mes para presentar un Bundt de cada miembro del grupo con la condición de haber utilizado un ingrediente específico y publicar la receta en una fecha dada en nuestros blogs. Bien, este es mi Bundt con el que además aprovecho para celebrar su día.

La propuesta de este mes a cargo de Lauren es muy interesante ya que hay que hacer el Bundt con alcohol de algún tipo. Creo que la mezcla de naranja y chocolate siempre funciona y el Grand Marnier da un arona estupendo a este pastel.

La receta de hoy es una variación de el Golden Grand Marnier Cake de Rose Levy Beranbaum que se encuentra en su libro The Cake Bible. Os recomiendo no sólo la receta sino el libro.


INGREDIENTES
85gr de pepitas de chocolate (he utilizado unas con 45% de cacao) 
Un chorrito de Grand Marnier
1 1/2 cuch de te de harina
3 huevos grandes a temperatura ambiente
242gr de nata agria (he mezclado 50% de yogur con 50% de nata)
2 cuch de te de agua de azahar
250gr de harina cernida
60gr de almendras tostadas troceadas
200gr de azúcar
1 1/2 cuch de te de levadura
1 cuch de te de bicarbonato
1 pizca de sal
12 gr de ralladura de naranja
227gr de mantequilla pomada (sin sal)

Para el jarabe de Grand Marnier

100gr de azúar
60gr de zumo de naranja
80gr de Grand Marnier

Para la salsa de naranja amarga

3 cuch de Grand Marnier
150gr de mermelada de naranja amarga


Después de medir y preparar todos los ingredientes, precalentamos el horno a 175ºC
 
En un bol pequeño mezclar las pepitas de chocolate con un chorrito de Grand Marnier y mezclar hasta que estén brillantes. Añadir la cucharada y media de te de harina y mezclar de nuevo hasta que todas las pepitas estén cubiertas por igual. Reservar.

En un bol mediano combinar los huevos con 60gr de nata agria y el agua de azahar. Reservar.

En el bol del mezclador ponemos juntos todos los ingredientes secos: harina, azúcar, levadura, bicarbonato, almendras picadas, sal y ralladura de naranja. Mezclamos 30 segundos a velocidad baja. Añadimos toda la mantequilla y lo que queda de la nata agria. Mezclamos a velocidad baja mientras los ingredientes secos empiezan a hidratarse. Aumentamos la velocidad y batimos minuto y medio. Con una espátula bajamos lo que queda a los lados y añadimos 1/3 de la mezcla de huevo. Batimos 20seg. Otro tercio, otros 20seg. El resto, batimos un poco y paramos la máquina. A mano añadimos las pepitas de chocolate y mezclamos con cuidado. Es posible que la muestra parezca cortada. Ni caso. Verter en el molde de bundt y meter en el horno unos 45/50 minutos. Cada horno es un mundo así que ya sabéis.

Cuando el bundt está casi hecho preparamos el jarabe calentando los tres ingredientes sin que lleguen a hervir hasta que el azúcar se deshaga. 

Sacamos el molde del horno y dejamos enfriar en rejilla 10min, lo desmoldamos y lo ponemos boca arriba. Le hacemos agujeritos e inyectamos jarabe en ellos con cuidado. Con el resto del jarabe lo pintamos. Antes de seguir decorándolo dejamos que se enfríe completamente. 

Después de emborracaharlo seguro que nos sobra jarabe así que con ese líquido y la mermelada de naranja triturado todo junto, hacemos la salsa de naranja amarga y cuando el bundt esté frío del todo lo bañamos con la salsa.

 GRAND MARNIER AND CHOCOLATE CHIPS BUNDT CAKE WITH SEVILLE ORANGES SAUCE

The host this time is Lauren (From gate to plate) and she has chosen booze as the special ingredient for this Bundt, Thank you Lauren for hosting!I have chosen an excellent Bundt cake from the Cake Bible by Rose Levy Barenbaum. I like chocolate and orange together, and Grand Marnier adds lots of flavor to this cake.

Well I hope you will enjoy this recipe as much as I have!

INGREDIENTS

1/2 cups chocolate minichips
1/4 teaspoon Grand Marnier
1 1/2 teaspoons flour
3 eggs (L)
1 cup sour cream
2 teaspoons orange flower water 
2 1/2 cups sifted flour
1/2 cup toasted almonds
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
a pinch of salt
2 tablespoons grated orange zest
1 cup unsalted soft butter

For the Syrup

1/2 cup sugar
1/4 cup orange juice
1/3 cup Grand Marnier

For the Seville Orange Sauce

4 tablespoons marmalade 
1 tablespoon water
1 tablespoon Grand Marnier

Preheat the oven to 350ºF

In a small bowl toss the chocolate chips and Grand Marnier until the chips are moistened and shiny. Add 1 1/2 teaspoons of flour and toss until evenly coated.

In a medium bowl lightly combine the eggs, 1/4 cup sour cream, and orange flower water.

In a large mixing bowl combine the dry ingredients and orange zest and mix on low speed for 30sec to blend. Add the butter and remaining sour cream. Mix on low speed until the dry ingredients are moistened. Increase to medium speed and beat for 1 1/2 min. Scrape down the sides. Gradually add the egg mixture in three butches, beating for 20sec after each addition. Stir in the chocolate chips.

Bake for 45/50min. The cake should start to shrink from the sides of the pan only after removal from the oven.

Shortly before the cake is done, prepare the syrup: Heat the sugar, orange juice and Grand Marnier until the sugar dissolves. Do not boil. As soon as the cake comes out of the oven, place the pan on a rack, poke the top all over with a wire tester, and brush on 1/2 the syrup.Cool in the pan on the rack for 10min, then invert onto a serving plate. Brush with the remaining syrup and cool completely before glazing with the sauce.

For the sauce just mix all the ingredients together.

  15. Me he quedado a medias, como te decía he dado un vistazo a tu blog y me pareces que haces muy buenas recetas y creativas, cocina de diseño diría yo; las mías son más humildes. Algún día me atreveré con alguna de tus recetas. Saludos.
